Gluten Free Apple Puff Pancake


The apples are baked into this delicious breakfast cake. So sweet and savory you won't need to add syrup. A great alternative to regular pancakes. 




Ingredients:
  • 6 eggs ( or egg replacer for vegan)
  • 1 1/2 coconut cups milk
  • 1 cup gluten free flour ( I use Bob's Red Mill 1 to 1 baking flour)

INGREDIENTS:

½ cup Bob’s Red Mill Gluten Free rolled oats
2 tablespoons unsweetened applesauce
1 tablespoon plain dairy free yogurt (I use SO Delicious made with coconut milk)
½ teaspoon pure maple syrup
¼ teaspoon cinnamon
½ cup Almond milk or other dairy free milk of your choice
1/4 shredded apple
1/4 chopped apple








DIRECTIONS:

Place all ingredients, except chopped apple, in a mason jar. 
Place lid on jar and shake until everything is well combined.
Refrigerate overnight.
In the morning stir the overnight oats and top with chopped apples and enjoy.
